Healthy Summer Recipes from Carla Simao

Carla Simao, owner of Kirstie’s favourite little Notting Hill cafe Teas Me, has shared a couple of scrumptious recipes fresh from her recent appearance in the Super Theatre at Ragley Hall last month.

Tea’s Me To Die for…Vegan brownie

The balls will keep for a week in the fridge (if you don’t eat them all at once!)

You will need:

450g dates

250g coconut

150g raw cocoa

150g linseed

50ml water

100g Desiccated coconut

• Pop everything but the desiccated coconut into a food processor and chop, adding a little of water if the mixture seems too dry.

• Form into balls using your hands

• Roll into the desiccated coconut

Tea’s Me Purple Cabbage Salad

The perfect summer dish- have it as a side with your BBQ, or on its on as a light lunch or dinner.

You will need:

1 purple cabbage

250g Pumpkin seeds toasted

250g sultanas, best soaked in apple juice or Rum before.

1 bunch of fresh mint

Sea salt to taste

Drizzle of the best Olive Oil you can find

Fresh lemon zest grated

• Shred the cabbage into a bowl

• Mix in all ingredients except the feta

• Crumble feta chunks on top.
